Lemon Bundt Cheesecake

Comments: This cake is good plain, or sprinkled with icing sugar using a fine strainer.

Ingredients Preparation

1 cup [225 g] margarine, softened
1/2 cup [115 g] butter, softened
1 [8-ounce / 227-g] package cream cheese, softened
6 eggs
3 cups [420 g] cake flour
3 cups [600 g] sugar
1/2 teaspoon [2.5 mL] vanilla extract
1/2 teaspoon [2.5 mL] lemon extract

Preheat oven to 325F [160C].
Grease and flour a bundt cake pan.
Cream together softened margarine, butter and cream cheese into a large bowl.
Add 2 eggs, 1 cup [140 g] of the cake flour and 1 cup [200 g] of the sugar; mix well.
Repeat until all eggs, flour and sugar have been added.
Well mix in vanilla and lemon extracts.
Evenly spoon batter in prepared pan.
Bake into preheated oven for approximately 1 hour 15 minutes, until a wooden pick inserted in the middle of the cake comes out clean.
Transfer pan onto a wire rack; leave to cool for 15 minutes.
Unmold onto wire rack.
Leave to cool completely.
