Cannellini Picata
Ingredients (use vegan versions):

* 2 tablespoons olive oil
* 1 small onion chopped
* 1 glove garlic minced
* 4 tablespoons flour
* 1 1/2 cups vegetable broth warmed
* 1-15 oz can cannellini beans
* 2-3 tablespoons fresh lemon juice ( to your taste)
* salt
* cooked rice, noodles, or pasta

Directions:

1. Saute onion and garlic over medium heat in oil until onion softens.

2. Add flour and stir until the flour starts to slightly brown.

3. Slowly add the warmed broth to the flour mixture, stirring to prevent lumps.

4. When mixture thickens add beans. . 5. Add lemon juice and salt to taste.

6. Cook until thickened and bubbly.

7. Serve over hot rice, pasta or noodles.
