McDonald’s Signature Burgers –

No you are not at Panera, but McDonald’s has gone “artisanal” with fancy (and pricier) sandwiches.

Talk about “Panera-ization!” McDonald's introduced three new sandwiches on May 1, and the menu items are a big leap from the Big Mac.

The sandwiches — Pico Guacamole, Sweet BBQ Bacon and Maple Bacon Dijon — come with buttermilk crispy chicken, 100% beef quarter-pound patty or artisan grilled chicken. The trio marks the chain's nationwide launch of its Signature Crafted Recipes line, which is more upscale — and more expensive — than menu items usually associated with McDonald's.

McDonald's new sandwiches cost between $5 and $7, on average, depending on your location and are on par with the prices at other chains in the better-burger category. Compare to the Smashburger that averages $5.59 or Five Guys that start at $5.39.

After reading the many reviews, and we all have our own likes and dislikes – you can make a “perfect” signature sammie your way using the ingredients/brands that you prefer. Do you like your guacamole a little chunkier? Do you like your BBQ sauce more/less spicy? How gooey do you want your cheese? A company like McD’s will never satisfy everyone – but you can do your best to re-create these YOUR way.

Do you want to make your own tempura for a chicken sammie?
McDonald’s Chicken Sandwich (NOT signature – but a good base)

1 egg
1 cup water
1/2 cup all-purpose flour
1/2 cup dry tempura mix
2 tablespoons yellow corn meal
2 teaspoons salt
1 teaspoon onion powder
1/2 teaspoon MSG (e.g., Accent)
1/4 teaspoon black pepper
1/8 teaspoon garlic powder
4 chicken breast filets
4 sesame seed hamburger buns
1 cup chopped iceberg lettuce
4 slices tomato

McChicken Sauce
1/4 cup mayonnaise
1 dash onion powder
For McChicken Sauce: Stir together well, refrigerate until needed.

For Sandwich: Beat the egg and then combine it with the water in a small shallow bowl. Stir.

Combine the flour, tempura mix, salt, MSG, pepper, onion powder and garlic powder in a one gallon size zip lock bag.

Pound each of the breast filets with a mallet until about 1/4-inch thick. Trim each breast filet until it is round. Coat each filet with the flour mixture by shaking in the zip lock bag.

Remove and dredge each filet in the egg mixture, coating well. Then return each filet to the flour/seasoning mixture. Shake to coat.

Put filets, bag and all, in the freezer for at least an hour. Cover and refrigerate remaining egg mixture.

After freezing, repeat the flouring process. Get fryer ready. Deep fry the chicken filets at 375 degrees F for 10-12 minutes or until light brown and crispy.

While the chicken is frying, toast 1 sesame seed bun and place sauce on top bun. Follow that with 1/4 cup freshly chopped iceberg lettuce and tomato slices. Then top with the cooked chicken patty, and the bottom of the bun (it will be upside-down).



How about their Spicy Chicken Sandwich?
2 tsp. paprika
1 tsp. cayenne pepper
1 tsp. onion salt
1 tsp. celery salt
1 tsp. sugar
1/3 c. cornstarch
2 eggs, well beaten
2 chicken breasts, sliced halfwise to create 4 pieces
1 c. light olive oil or canola oil for frying

In a large saucepan, heat oil over medium high heat. While the oil is heating, combine cornstarch and all other spices in a shallow dish, stirring together until well mixed. Pour well beaten eggs into a second shallow dish. Coat chicken pieces thoroughly with the cornstarch/spice mixture. Dip both sides into the egg mixture, then transfer immediately to hot oil and pan fry on both sides until cooked through (about 2-3 minutes per side). Remove from oil, placing cooked chicken on a paper towel momentarily to drain excess oil from the sandwich. Serve on hamburger buns with mayonnaise and lettuce. Enjoy!

Each Artisan Grilled Chicken filet is:

• 100% real chicken breast
• Free of artificial flavors, added colors and preservatives
• Seasoned with pantry spices and herbs like parsley, salt and onion powder
• Cooked in McDonald’s kitchens using a canola and olive oil blend
• Seared on the grill to lock in flavor and juices

Compared to the previous grilled chicken recipe, the new Artisan Grilled Chicken filet has fewer ingredients and no longer includes sodium phosphates, a type of salt that helps retain moisture.


Cloned Artisan Grilled Chicken

serves 4

• 1/2 cup of water
• 2 tsp garlic powder
• 1 tsp onion powder
• 1 tsp dried thyme
• 1 tsp sugar
• 1 1/2 Tbsp salt
• 2 Tbsp honey
• 6 Tbsp fresh lemon juice, from about 4 fresh lemons
• 4 boneless, skinless chicken breasts

Whisk together water, garlic powder, onion powder, thyme, sugar, salt, honey and lemon juice. Pour over chicken and refrigerate 2 to 4 hours.

Remove chicken from marinade and grill for approximately 15 minutes.

**You can also cook the chicken in the skillet. Heat 1 Tbsp of olive oil in skillet, sear chicken on one side, turn over and continue to cook until internal temperature reaches 165 degrees.**



Cloned McD’s Burgers

• 1 lb 80% lean ground chuck
• 4 tablespoons salt
• 2 tablespoons Accent seasoning (msg)
• 1 teaspoon ground black pepper
• 1⁄4 teaspoon onion powder
Shape and fry.

McDONALD’S HAMBURGER SEASONING

4 tablespoons salt
2 tablespoons Accent (MSG)
1 teaspoon ground black pepper
1/4 teaspoon onion powder

Mix all ingredients well in a spice shaker with big enough holes to allow pepper to flow. Makes about 3
ounces. Use on ALL McDonald's hamburgers.

Note: If you don't like MSG just leave it out.
