I've always loved pork with apple dishes. If I have pork - I want applesauce, apple salsa, apples and cabbage, apple anything!

Sometimes it's nice to "step outside the box" and try something a bit different. To begin with - this recipe calls for grilling your chicken (indoors or out - doesn't matter in my house!) but this can also be done in your skillet or oven!

Grilled Chicken with Apple Salsa

Begin by making your salsa:

Core and chop 2 c. apples (York, Fuji, etc. or a nice combination)
1 large Anaheim chile pepper, seeded and chopped
c. chopped onion
c. lime juice
Salt and pepper to taste

Combine; allow the flavors to meld for about hour.

(Note: I am not a ?heat? person - occasionally it?s nice to have - but not all that often. I have substituted other peppers for this - it?s all a matter of taste.)

Mix your marinade: A splash or two of white vinegar in about 1/2 c. apple juice; a bit of grated lime peel; salt and pepper to taste.

This should be enough for 4 skinless, boneless chicken breasts. Pour over chicken breasts and marinate for 20 - 30 minutes; drain; discard marinade; preheat grill and grill until done.

Serve salsa on the side. Serves 4
