Mac ‘n’ Cheese
16 Oz Uncooked Elbow
3 Tbsp All Purpose Flour
2 Cups Milk
1 Tbsp Butter (stick Or Tub)
8 Oz Shredded Cheddar
3 Oz Velveeta Cheese, Cut Into Thin Strips
1/8 Tsp Black Pepper
3 Tbsp Seasoned Breadcrumbs
Preheat Oven To 400°f.
Boil Macaroni Until Tender But Firm.
While Pasta Cooks, Whisk Together Flour & ½ Cup Milk In A Small Bowl.
Pour Remaining 1½ Cups Milk Into A Large Saucepan & Heat Over Low. Once Milk Is Slightly Warmed, Turn Heat To Medium-low & Add Flour & Milk Mixture, Stirring Constantly Until Thick.
Reduce Heat Slightly & Add Butter, Cheeses, & Pepper. Cook Until Smooth, About 5 Minutes.
Drain Macaroni, Then Combine With Cheese Mixture, Stirring Thoroughly.
Pour Into A 13" X 9" Baking Dish. Sprinkle Breadcrumbs Lightly & Evenly On Top & Bake 30 - 35 Minutes.
Serve Immediately.

Mac ‘n’ Cheese With Chicken & Broccoli
To Make This Dish Even More Decadent, Add Cooked Chopped Pancetta Or Cooked & Crumbled Smoked Bacon.
1 Lb Skinless Boneless Chicken Breasts
Olive Oil (for Brushing)
2 Heads Of Broccoli, Cut Into Florets (about 5 Cups)
2 Tbsp Unsalted Butter
2 Tbsp All Purpose Flour
4 Cups Whipping Cream
1 Cup Grated Fontina Cheese (about 4 Ounces)
1 Cup Grated Cheddar Cheese (about 4 Ounces)
1 Lb Pasta Shells, Freshly Cooked
½ Bunch Fresh Chives, Chopped
Prepare Bbq (medium Heat).
Sprinkle Chicken With Salt & Pepper. Brush Both Sides With Olive Oil. Grill Until Cooked Through, About 6 Minutes Per Side. Dice Chicken & Set Aside.
Cook Broccoli In Medium Pot Of Boiling Salted Water Until Crisp-tender, About 3 Minutes. Set Aside.
Melt Butter In Heavy Large Saucepan Over Medium Heat. Add Flour & Cook 2 Minutes, Stirring Constantly. Gradually Mix In Cream. Bring To Boil, Reduce Heat, & Simmer 10 Minutes, Stirring Frequently.
Add Both Cheeses & Stir Until Sauce Is Smooth. Season To Taste With Salt & Pepper.
Add Pasta, Chicken, & Broccoli To Sauce; Mix Well.
Garnish With Chives & Serve.
