5 Ingredient Chicken Quesadillas

*2 C chicken, cooked and chopped
*4 (10 in) flour tortillas
*2 C of fresh spinach, washed, squeezed dried and chopped
*1 (6 oz.) jar mushrooms, drained and sliced (or fresh, sauted)
*2 C Monterrey Jack cheese, shredded

1.Spread the chicken on to one half of each tortilla.

2.Add the spinach, mushrooms and cheese then fold the tortilla over the filling.

3.Place quesadilla into a lightly greased skillet over medium heat and cook 10 minutes, turning once. Watch closely so the tortilla browns, but doesn’t burn.
