This one is a lot of fun. I had never had it until Devember 18, 1971. It was made by my monster-in-law for my wedding reception to her darling son. I complimented her on it, so I got the recipe as part welcome to the family. Well at least I kept the recipe ! Its easy and I have made as many as 4 batches at once in the large Tupperware Salad Bowl for large groups. Or you could make it in bowls and keep them chilled and pull one out of fridge as its needed.
1 3 oz. pkg. lime jello
1 c. boiling water
1 t. sugar
1 8 oz. cream cheese ( softwned )
1 sm can crushed pineapple ( drained )
1 t. vanilla
1 c. 7 Up ( cold )
1/2 c. chopped nuts
green food color
In a medium bowl disolve Jello in boiling water.
Add cream cheese - blend at medium speed until smooth.
Stir in pineapple, sugar, vanilla, 7 Up, nuts and food
Pour into serving dish. Chill well ( stir it just before
it sets )
Keep it in fridge until serving.
