8.5 Carb Pizza!!!

This pizza recipe has a very rich, gourmet taste to it. I love pizza and I love that I don’t have to deny myself the indulgence with this very low carb recipe. Enjoy!

1 frozen pizza crust dough ball , thawed
5 medium garlic cloves
2 tbsp extra virgin olive oil
2 medium red bell peppers , seeded and cut into ¼-inch strips
1 tsp ground basil leaves
2 1/2 oz canned mushroom slices, drained
14 oz Artichokes, hearts, with water, canned , drained and chopped
1 1/2 cup part skim shredded mozzarella

1 Preheat oven to 425 degrees F.
2 Coat a 12-inch pizza pan with nonstick cooking spray.
3 Unroll the dough and place in the prepared pan, starting at the center and pressing out with your hands.
4 Bake for 5 to 8 minutes, or until light golden brown.
5 In a food processor, mince the garlic and add the olive oil, blending well.
6 Spread the garlic mixture over the partially baked crust.
7 Use a medium skillet coated with nonstick cooking spray, sauté the red pepper strips until crisp-tender, about 5 minutes.
8 Layer the pepper strips, basil, mushrooms slices, and artichokes over the garlic mixture, and top with the cheese.
9 Bake for 10 minutes, or until the crust is golden brown and the cheese is melted.
10 Cut into small slices before serving.
