a 20 minute meal - easy for summer

This is something that you can make before you go to work in the morning and its ready when you get home! It’s quick, simple and delicious!

Boil your water, add salt and cook 1 lb. pasta (your choice) until al dente, drain well.

While you’re waiting for your water to boil/pasta to cook - combine 2 T. oil (I prefer olive oil), 2 T. balsamic vinegar (or red/white wine vinegar), 1 env. Good Season’s Italian Dressing (dry mix). Coarsely chop 3 - 4 good sized tomates and combine with cooked pasta; add fresh mozzarella balls; toss with dressing mixture; sprinkle with fresh basil and a few turns of fresh ground black pepper.

Cover and refrigerate until ready to serve.

Serve with crusty Italian bread - if desired, top with grated cheese when serving.
