A good Sunday breakfast -

I played around with this one day - and this was a hit!

I sliced a couple bananas (firm-ripe) and tossed with a spoon of sugar (teaspoon size) and chopped pecans…set aside.

Combined my pancake mix with water, a mashed banana (very ripe) and added cinnamon to taste.

Baked on the hot griddle till done and served with bananas and nuts on top. Or top with whipped cream, then bananas and nuts.

A fresh fruit salad (sliced strawberrries, blueberries, seedless grapes, diced canteloupe and/or honeydew, sliced apples, etc.) is a nice compliment to this as well.

NOTE: toasted chopped pecans taste better than non-toasted with this
