a "man's" mustard

I don’t use hot mustard very often - just occasionally; but the men in the family use it quite a bit - so that is how I named it.

Combine 1/4 c. dry mustard with 2 T. cold water - adding the water gradually and mixing until smooth. Let set about 15 minutes before using.

Now this is hot and if it is too hot for you, add 1 t. sugar or 1 t. heavy cream to tone it down a bit.

Instead of water I have also used flat beer, wine (for Uncle Frank), vinegar or milk when making this. Gives a slight change of flavor.

Goes well with lamb, roast beef (hot or cold), corned beef, etc.
