Today was such a busy day - and I had no time to spend in the kitchen. So I made another meal from SMR/Daily Recipes/Quick & Easy and it worked out just fine for me:
15-Minute Chicken & Rice Dinner
Completely cooked in one skillet, this tasty chicken and rice dish is easily and quickly assembled. Add a salad and crusty bread if desired. (which of course I did and those of you that know me - you never have to suggest crusty bread to me!!)
1 Tbs vegetable oil
4 (4-6-oz.) fresh boneless, skinless chicken breasts
1 10.75-oz. can cream of chicken soup
1 1/3 cups water or 2% milk (I used whole milk)
1 1/2 cups quick-cooking rice, uncooked
1 Heat oil in a large nonstick skillet over medium-high heat. Add chicken; cover. Cook 4 minutes on each side or until cooked thoroughly.
2 Remove chicken from skillet. Add soup and water; stir to mix and bring to a boil. Stir in rice, then top with chicken; cover. Reduce heat to low and cook 5 minutes.
Served with a green salad, crusty Italian bread and steamed carrots!
We were eating within a half hour - it was perfect!!
