Andouille and cheddar stuffed meatloaf

ANDOUILLE AND CHEDDAR STUFFED MEATLOAF

1 lb. ground beef
1 lb. ground pork
1 small onion, finely chopped
½ red bell pepper, chopped
2 cloves garlic, minced
1 cup fresh bread crumbs
2 eggs, lightly beaten
Salt and Pepper
2 tsp. chili powder
3/4 cup tomato sauce, optional
2 tbsp. mustard
1/4 cup chopped fresh parsley
1 8 inch link andouille sausage
1 cup Cheddar - grated

Combine all ingredients except sausage and cheese. Place half of mixture in loaf pan. Lay sausage down center of mix. Now top with 3/4 cup of cheddar. Top with remaining meatloaf mix and sprinkle remaining cheddar. Bake at 375 degrees approximately one hour.
