As you already know - no meat on Wednesdays and Fridays during Lent.
Angel hair pasta, cooked al dente, drained.
Using same pot, drizzle olive oil in pan; add minced fresh garlic; add cooked pasta and toss to coat; add minced fresh parsley, salt and cracked pepper to taste. Add seeded, drained pepperoncini; mix well.
Served with crusty Italian bread and green salad: romaine, iceberg, celery, cucumbers, tomatoes, red onion, chick peas, olive oil, red wine vinegar, basil, salt, pepper.
Lunch: Swiss grilled cheese sandwiches using New York rye bread and tomato soup.
***I prefer grilled cheese made with rye bread and Swiss cheese - it is soooo good! Please try it sometime! (I use real butter not margarine)
