I am looking for a recipe for mashed cauliflower. I have had it a Ruby Tuesday’s.

So Simple Cauliflower Mashed “Potato”
8 Cups cauliflower florets or a small head of cauliflower (frozen gives the best flavor for this!)
1/4 cup Kraft ranch dressing
1 green onion thinly sliced
Bring water to boil in large sauce pan. Add Cauliflower, cook 15 minutes or until cauliflower is very tender. Drain cauliflower, add dressing and mash until cauliflower is light and fluffy. sprinkle with onions. Serve.

1 CUP CHICKEN BROTH
1 LARGE HEAD CAUILFLOWER
1/3 CUP, ABOUT 3 OZ. GARLIC AND HERB SOFT CHEESE
A HANDFUL GRATED PARMIGIANO-REGGIANO OR ROMANO
1/8 TESPOON GRATED NUTMEG, EYEBALL IT
3 TABLESPOONS CHIVES, CHOPPED OR SNIPPED, ABOUT 12 BLADES
ADD CHICKEN STOCK AND 1 TEASPOON OF EXTRA-VIRGIN OLIVE OIL, 1 TURN OF THE PAN, TO DEEP POT.TRIM AWAY GREENS AND STEMS FROM THE BASE OF THE CAULIFLOWER, CUT AWAY THE CORE WITH A SHARP PARING KNIFE, SET CORED HEAD INTO POT WITH BROTH. COVER POT AND BRING TO A BOIL. REDUCE HEAT TO MEDIUM LOW AND COOK CAULIFLOWER, COVERED, UNTIL TENDER, 8 TO 10 MINS.UNCOVER THE POT AND MASH THE CAULIFLOWER. LET SOME LIQUID COOK OFF AS YOU SMASH THE CHEESES INTO THE CAULIFLOWER.AS THE MIXTURE THICKENS, TURN OFF HEAT AND SEASON WITH SALT AND PEPPER AND NUTMEG. STIR IN CHIVES AND TRANSFER CAULIFLOWER TO A SERVING DISH.
