Apple Butter

The mixture of apple varieties make this apple butter in a great taste. I use 2 of each variety of apples. Makes for a full bodied rich taste.

1 cup packed brown sugar ( your choice of dark or light)
1/2 cup honey
1/4 cup apple cider
1 Tbsp. ground cinnamon
1/4 tsp. ground cloves
1/8 tsp. ground mace
10 medium apples, 2 each of Granny Smith, Jonathan, Rome, York and Winesap. Peeled, cored and cut into huge chunks

Combine all ingredients in a 5 quart crock-pot. Cover and cook on low 10 hours or until apples are very tender.

Place a large fine-mesh sieve over a bowl, spoon one-third of apple mixture into sieve. Press mixture through sieve using the back of a spoon. Discard the pulp. Repeat with the remaining apple mixture. Return apple mixture back to the crock-pot, cook uncovered for 1-1/2 hours on high or until mixture is thick, stirring occasionally. Spoon into a bowl, cover and chill up to a week.
