Apple Cinnamon Rice Pudding
3 Tbsp Butter
1 Lg Apple, Peeled, Cored & Chopped
1 Cup Uncooked Short Grain Rice
1/3 Cup Raisins
2 Cups Unsweetened Apple Juice
1 Tsp Ground Cinnamon
1/2 Tsp Salt
1/2 Tsp Nutmeg
1 Can Regular Or Low Fat Eagle Brand
In Medium Saucepan, Melt Butter; Add Chopped Apple &cook 2 Minutes, Stirring Constantly. Add Rice & Cook While Stirring, For 1 Minute.
Add Raisins & ½ Cup Apple Juice; Continue Stirring For About 1 Minute. Add The Rest Of The Apple Juice, Cinnamon, Salt & Nutmeg; Bring To A Boil, Stirring Occasionally.
Cover & Cook 15 - 20 Minutes Or Until Rice Is Tender. Add Eagle Brand; Mix Well. Reduce Heat To Medium & Continue Stirring Until Smooth & Warmed.
Cool Slightly (pudding Thickens As It Cools).
Serve Warm, Sprinkled With Additional Cinnamon, If Desired. Refrigerate Leftovers.
