Apple Oatmeal Cranberry Cookies
1 1/2 cups sugar
1 cup margarine (do not use butter or spread)
1 1/2 cups flour
1 teas. baking soda
1 teas. ground cinnamon
1 teas. vanilla
1/2 teas. salt
2 large eggs
2 medium (peeled, cored and diced)
3 cups quick-cooking oats (uncooked)
1 cup dried cranberries
3/4 cups walnuts (optional)
In a large bowl with mixer, beat margerine and sugar until fluffy. Add flour, baking soda, cinnamon, vanilla, salt and eggs. Beat until blended, occasionally scraping bowl with spatula.
With a spoon, stir in apples, oats, cranberries and nuts.
Drop by teaspoonfuls on ungreased cookie sheet.
Bake at 350º F for 20 to 25 minutes or until golden
