Apple Pie Fudge
3 cups sugar
1 tsp. apple pie spice
3/4 cup butter
1 (5 oz.) can evaporated milk
12 oz. white chocolate chips
1 sm. container marshmallow crème
1 tsp. vanilla extract
1 cup walnuts, chopped
On medium heat in a 3-quart heavy saucepan, heat sugar, apple pie spice, butter and evaporated milk to a full rolling boil; stirring constantly. Continue to boil on medium heat for 4 minutes or until candy thermometer reaches 234 degrees; stirring constantly to prevent scorching. Remove from heat. Stir in white chocolate chips and marshmallow crème until melted. Add vanilla and nuts, and then stir until well combined. Spread mixture immediately in a foil lined 9-inch square pan. At room temperature, cool at least 4 hours; cut into squares. Store in an airtight container.
