Apples 'N' Cream Pancakes

Apples ‘N’ Cream Pancakes

1/2 Cup milk
2 eggs
1/2 Cup flour
1/4 tsp salt
1 to 2 T. butter
1/4 C. packed brown sugar
1 pkg. (3 oz.) cream cheese, softened
1/2 C. sour cream
1/2 t. vanilla
1-1/2 C. thinly sliced unpeeled apples
1/4 C. chopped walnuts

In a small mixing bowl, combine milk, eggs, flour, and salt.
Beat till smooth.

Heat a cast iron or oven proof skillet in a 450’ oven til hot.
Add butter to the skillet and spread over the entire bottom.
Pour in batter. Bake for 10 minutes or till golden brown

Meanwhile combine cream cheese and sugar. Blend in sour cream and vanilla. Fill pancake with 3/4 C. cream cheese mixture and top with apples. Spread remaining cream cheese mix over apples and sprinkle with nuts. Cut into wedges and serve immediately
