Note: This is one of my quick, easy go to dishes
4 boneless skinless chicken breast halves (about 5 oz. each)
2 tablespoon canola oil
3 tablespoons apricot preserves
2 tablespoons orange juice
4 teaspoons honey
In a large skillet, cook chicken in oil over medium heat for 7 to 9 minutes on each side or until juices run clear. Combine the preserves, orange juice and honey and pour over chicken. Cook for 2 to 3 minutes or until sauce is heated through.
