Arthur Godfrey’s Orange Kiss-Me Cake

1 large orange
1 cup raisins
1/3 cup walnuts
2 cups sifted Pillsbury’s Best Flour
1 teaspoon soda
1 teaspoon salt
1 cup sugar
1/2 cup shortening
3/4 cup milk
2 eggs, unbeaten
1/4 cup milk
Orange nut topping
1/3 cup orange juice
1 teaspoon cinnamon
1/3 cup sugar
1/4 cup chopped walnuts

To make the cake: Grind together orange pulp and rind, raisins, walnuts.
Sift together flour, soda, salt, sugar.

Add shortening and milk. Beat for 2 minutes, about 300 strokes, until batter
is well blended. (With electric mixer, blend at low speed; then beat at
medium speed for 2 minutes).

Add eggs and milk. Beat for 2 minutes. Fold orange-raisin mixture into
batter. Pour into well-greased and lightly floured 12x8x2 or 13x9x2 pan.
Bake in moderate oven, 350 degrees, for 40 to 50 minutes.

If you prefer, cake may be baked in two 8 or 9-inch round layer pans at 350
degrees for 35 to 45 minutes.

To make the orange nut topping: Drip orange juice over warm cake. Combine
sugar, cinnamon, chopped walnuts. Sprinkle over cake. Decorate with orange
slices.

I made this delicious cake today. It had a beautiful light texture. I baked it in a 9 X 13 baking dish. Thank you for the recipe.
