I had this unbelievable Artichoke Risotto up in Saratoga Springs, NY. It was a small, but busy!, Italian restaurant on the main drag there. I haven’t been able to find a recipe for it anywhere! It was very creamy, had artichokes and definatlely cheese and some cream in it. It was heavenly! If anyone has a recipe, please share! My mouth has been watering just thinking about it and that was months ago!! Thank you in advance!!!
