Snowtime Beef Casserole

This attractive dish is like a cannelloni without the pasta and the extra effort.
Exceptional. This casserole will warm up even the coldest heart in wintertime.

1 pound ground beef
2 cans (8 ounces each) tomato
sauce ¼ cup chopped onion
1 teaspoon parsley flakes
½ teaspoon oregano
1 teaspoon basil
¾ teaspoon salt ¼ teaspoon pepper
2 packages (10 ounces each)
frozen chopped spinach,
cooked and drained
1 pint cottage cheese
1 package (8 ounces) mozzarella
cheese slices

Brown beef in skillet; pour off fat. Stir in tomato sauce, onion, parsley, oregano, basil, ½ teaspoon salt, and pepper. Simmer uncovered 10 minutes, stirring occasionally. Combine spinach with cottage cheese and remaining ¼ teaspoon salt. Spoon spinach mixture around edge of baking dish (9" X 13"). Pour beef mixture into center. Cut each mozzarella slice into 3 lengthwise strips. Arrange in lattice design over meat. Bake at 375°F for 20 minutes. Serves 8.
