Asian Oven-Fried Chicken

1 tsp. unsalted butter
1/4 cup plus 3 Tbs. buttermilk baking mix
2 Tbs. sesame seeds
2 tsp. soy sauce
2 tsp. lemon peel, grated
1-1/4 tsp. parsley
1 tsp. garlic powder
1-1/2 lbs. whole chicken, cut up

Preheat oven to 425F. Melt butter in a 9x13 inch pan in oven until
melted. Combine baking mix, next 5 ingredients and salt to taste in a
shallow bowl. Coat chicken. Place skin sides down in pan. Bake 35
minutes uncovered. Turn, and bake about 15 minutes more, until chicken
is cooked through.
