1 8oz pack of Cream Cheese
4 oz Cheddar Cheese
Wood of your choice(we use cherry)
Take the jalapenos and cut them in half. Remove the seeds and membrane within the jalapeno.
Get the cream cheese to room temperature. Mix the cheddar cheese and cream cheese in a bowl. If you wish, add a touch of garlic powder, and onion powder to taste. Place mixture into a zip lock bag and move the mixture to one of the corners. Cut a small opening in the corner of the zip lock bag. Now squeeze the mixture into each one of the halved jalapenos.
Place a halved party sausage on each of the cream cheese filled jalapenos. Now cut each strip of bacon in half, then wrap around each jalapeno. Place a toothpick through the bacon/sausage/jalapeno. Now you are ready for the grill
You can smoke ABTs or you can grill them. Do not place directly over the flame as the bacon grease will cause your fire to burn the ABTs. We used a cast iron grill plate (you can get these at Wal-Mart) to protect our ABTs from the flame.
Cook your ABTs at about 275-300 for about 45 minutes to an hour.
After removing from the grill, lightly brush the ABT with BBQ sauce.
FYI: When working with the jalapenos, be careful. We wear gloves and eyeglasses to prevent too much pain.
