Baby Back Ribs with Honey-Jalepeno Marinade

MAKES 4 SERVINGS

Ingredients:

1 cup vegetable oil
Juice of 2 limes
1/4 cup honey
6 coves of garlic, minced
1 jalapeno chile, seeded and minced
2 Tbsp chopped fresh oregano OR 1 Tbsp dried
1 Tbsp sweet paprika
1 1/2 tsp salt
1 tsp fresh ground pepper
2 racks baby back ribs, about 5 lb. total, cut into 2 pieces
Wood chips or chunks, soaked for 30 minutes and drained

Marinade:

Combine the oil, lime juice, honey, garlic, jalapeno chile, oregano, paprika, salt and pepper in a small bowl and whisk to blend. Put ribas in a shallow dish or 1 or 2 large ziploc bags and pour in marinade to cover. Cover or seal and marinate for up to 2 hours at room temperature or overnight in the refrigerator.


Prepare charcoal or gas grill for indirect grilling over medium-high heat.

Sprinkle wood chips on the coals, or add in a perforated foil packet to gas grill.

Grill ribs directly over heat, turning often until well browned, usually 6-10 minutes total. Transfer seared ribs to unheated protion of the grill, cover and cook until no longer pink in the middle. Usually 20-25 minutes longer.
