Baby Burgers

These little jewels are so good that they disappear in the matter of minute’s better make plenty when having a party.

1-1/2 lb. ground chuck (85% lean)
1 tsp. kosher salt
1 tsp. freshly ground pepper
Cocktails buns
Roma tomato sliced
Leaf lettuce
Blue cheese dressing

Preheat the grill to medium-high. Clean grates, then oil lightly.

Combine meat, salt and pepper in a large bowl, toss gently with your hands to mix, work quickly and with a light touch, handling the meat as little as possible. Shape the meat in a biscuit cutter that’s larger that the bun (this allows for shrinkage). Grill burgers until they register 160* on an instant read thermometer.

Serve on rolls with tomato slices, lettuce and blue cheese dressing.

Makes 8 mini burgers

What are, “Cocktails buns”? There are lots of different styles of buns available at the grocery stores but I don’t recall seeing anything with this name. I have used potato dinner rolls for mini-burgers before though. I think I got the idea from Alton Brown.

I use the party rolls they work beautifully to but you do have to slice them, which is no problem either. If you want to use the potato buns that is good to. Most of the time we use mini onion rolls they do make them here store brand but they make a good mini burger.
