Baked Acorn Squash

Baked Acorn Squash

(6 servings)

3 acorn squash
grated nutmeg or ground ginger to taste
salt and freshly ground pepper to taste
3 tsp brown sugar, or more
6 tsp butter
6 tsp sweet sherry (optional)

Preheat oven to 325 F.

Split squash into halves and scoop out fibers and seeds.

Sprinkle cavity of each half with nutmeg, salt, pepper, brown sugar and a tsp of butter.

Bake for 30 to 45 minutes, or until flesh is tender. Five minutes before serving, add a tsp of sherry to each cavity.
