Baked Bean Dinner


1 can (20 oz.) pineapple chunks in juice, drained, reserving juice for another recipe

1/2 green and/or red bell pepper, julienned
1 lb. Polish sausage, knockwurst or franfurters, cut into 1-inch chunks
1/3 c. light brown sugar, firmly packed
1 t. dry mustard
2 cans (16 oz. each) baked beans

Microwave pineapple chunks with pepper and onion on HIGH 3 minutes (cover)
Add sausage; cover and microwave on HIGH 6 minutes

In bowl, combine brown sugar, dry mustard and beans; add to sausage in microwave, cook on HIGH 8 to 10 minutes, uncovered - stir after 4 minutes.

Since I don’t microwave, I place everything in a casserole and bake at 350* F. until heated through. Depending on the type of sausage used - I may fry or boil it first to cook it through.
