Baked Cajun Cabbage

1 large head of cabbage

1/2 cup butter
4 tablespoons all purpose flour
1 cup chopped onions
1 cup chopped celery
1 cup chopped bell pepper
Cayenne pepper to taste
1-1/2 cups of milk
1/2 lb. cheddar cheese, shredded

1 cup chopped green onions
1/4 cup seasoned Italian bread crumbs

Remove outer leaves from cabbage. Cut into bite-size sections, remiving heart. Boil about 10 minutes, uncovered, until tender/crisp. Drain; set aside. In separate saucepan, combine butter and flour, blending well over medium heat. Add onions, celery, bell pepper, salt and cayenne pepper. Saute for 10 minutes. Add milk, blending well over low heat until creamy. Add cheese; stirr until smooth. Place cabbage in 2-qt. casserole; top with cheese sauce. Sprinkle with green onions and bread crumbs. Bake at 350 for about 30 minutes. Serves about 6.
