Baked Cheese, Bacon And Garlic Grits

1 Hour

4 c water
1/2 t kosher salt
1 c quick-cooking grits (not instant!)
1 1/2 c shredded sharp cheddar cheese
1/4 c butter
1/2 c milk
1 clove garlic, minced
2 large eggs, beaten
4 slices cooked, crumbled bacon

Bring the water and salt to a boil. Stir in the grits. Cook until the grits are done. Remove from the heat and add the next 4 ingredients; stir until the cheese and butter has melted. Add a very small amount of grits to the eggs and stir well. Add a little more and stir well again. Then pour this mixture back into the grits, add bacon and mix well. Pour the mixture into a greased 2 qt. casserole dish. Bake.
