BAKED CHEESY POTATOES WITH BACON
1 lb. red skinned potatoes, boiled until fork tender and sliced into Â½ in. thick slices
6 rashers of bacon, fried crisp tender
1/4 tsp. cayenne
4 oz. Monterey jack cheese
Â½ bunch chives, minced
- Spray a round cake pan with non-stick spray. Preheat the broiler.
- Arrange the potato slices in an overlapping layer in the prepared cake pan. Sprinkle salt and cayenne pepper on top of the potatoes. Top with the bacon followed by the cheese and place under the broiler until cheese melts and bubbles and browns in places. Garnish with chives and serve.
