Baked Haddock Creole
2 lb. haddock fillets
1 tsp salt
2 Tbsp butter
1 small onion, minced
1/2 clove garlic, minced
2 Cups strained canned tomatoes
1 bay leaf
dash cayenne pepper
Sprinkle fillets with salt and place in a shallow uncovered baking pan
Melt the butter and lightly brown the onion and garlic in it
Add the strained tomatoes, bay leaf and cayenne. Let the mixture come to a boil
and pour it over the haddock.
Bake in a hot oven (425) for 1 hour
