Baked Lemon Potatoes

My family goes crazy when I make these!!! :lol:

I marinade the potatoes for hours before I cook them, but I don’t know if it’s necessary! :?


6 medium Potatoes, peeled and 1"-cubed
1/2 C Lemon Juice
1/4 C Olive Oil
3 cloves Garlic, minced
1 Tbsp Oregano, dried
1 tsp Salt
1/2 tsp Pepper

Mix everything except potatoes in a large Zip-lock bag.

Add potatoes; close bag and make sure they are covered in marinade.

Let sit in the refridgerator for 1 hour or more.

Set oven at 375 F.
Put potatoes and marinade in a 13x9" baking dish. Level out the potatoes.
Cover with Aluminum Foil and bake for 45 minutes, or until the potatoes are soft when you poke them with a fork.
Take foil off and broil until golden-brown; about 5 minutes.

They should be a little bit crispy around the edges when they’re done!
