Baked Pineapple
1 (20 oz) can crushed pineapple
2 Tbsp cornstarch
1/4 cup cold water
1 cup sugar
2 eggs, beaten well
1 tsp vanilla
Butter
Cinnamon
Stir all together except butter and cinnamon; mix well. Pour into a lightly greased 1 1/2 quart baking dish. Sprinkle with cinnamon and dot with butter. Bake for 45 minutes to 1 hour @ 375 degrees.
