Baked Pork Chops with Stuffing

Dinner will be baked pork chops with stuffing, large tossed salad, yeast rolls and an easy baked apple dessert.

BAKED PORK CHOPS & STUFFING

4 boneless pork chops (3/4" thick)
1 Can Cream of Celery or Fat Free Cream of Celery Soup
1 box Cornbread Stuffing
1/2 cup whole kernel corn
1 small onion, finely chopped
1/4 cup celery, finely chopped
1 tbsp. brown sugar, packed
1 tsp. spicy brown mustard

Mix stuffing, soup, corn, onion and celery together. Spoon into greased 9 inch pie plate. Place pork chops on top of mixture. Mix sugar and mustard together and spoon over chops. Bake at 400 degrees for 30 minutes until done.

Easy Baked Apple Dessert

Core but do not peel the number of apples needed. Place in a microwave safe dish. Pour 7up or diet 7up over apples making sure to fill up the core. Bake for 7-8 minutes (in microwave) or until tender. Delicious, light and low in calories if using a diet soda.
