These are some what good a bit sweet for me. Got this recipe from a friend in FL when we lived there. I use the Splenda brown sugar as the regular sugar is to sweet for hubbie as he is a diabetic.
3/4 cup margarine
1 egg
13/4 cups quick oats
1 teaspoon salt
1/2 teaspoon baking soda 1 cup firmly packed brown sugar
1 cup mashed very ripe bananas
11/2 cup all-purpose flour
1 teaspoon cinnamon
1/4 teaspoon nutmeg
1/2 cup coarsely chopped nuts
Preheat oven to 325*, grease a cookie sheet. Cream margarine and brown sugar in a large bowl at medium speed. Beat egg and bananas until creamy. Combine oats, flour, salt, baking soda and spices. Stir into creamed mixture. Stir in chopped nuts.
Drop 2 level tablespoons of dough into a mound to form each cookie, 2 inches apart on cookie sheet.
Bake at 325* for 15 to 17 minutes, cool one minute on sheet. Remove to a rack.
NOTE: you can grate less ripe bananas and get the same results.
We always serve these when we have a party I make about 48 dozen and by the time the party is over all of the cookies are gone puff!!!
I also made a banana spread for them but haven’t been able to fine that recipe yet, I am still looking.

I need some recipes for old fashioned cooking like my great grand mother use to cook but without all of the fat that went with it.
Do you have a good recipe for a nice creamy pineapple tidbit coleslaw the one I use is not it, mine was real creamy I did not use any cream in it either another recipe lost. I lost a lot of my old fashioned recipes when we moved into this house in 2004 4 huge boxes are missing the moving company said that they know nothing about them I also had somebody clean our storage shed out when we lived in Gainesville, GA we think the owner did it as she had keys made to all units and a lot people were missing their things, but you have got to prove it.

Guess what we were trying to think what else to have for today along with the cookies. We are going to make the bread maybe two loaves as every one loves bananas. Thanks for coming to the rescue. I use to make a banana spread for the cookies but I lost it to.
A butter type to spread on the banana oatmeal cookies or now the banana oatmeal bread we have just made from your recipe boy is it yummy.
My friend didn’t know about Recipe Secrets site she loves it I can’t keep her off my computer. I told her to become a member of it she said she would when she gets home next month. Well got to go for now and make the coleslaw.
By the way do you have a more tasty coleslaw other than the pineapple one I have it is not my pineapple coleslaw at all mine is a lot creamy and has more taste to it this one is sort of bland.
Thanks if you do and it does not take a long time to merinade it mabey about 4 hours tops.
