BANANA SPLIT BREAD PUDDING

1 c. mashed very ripe bananas (2 medium)
1/2 c. light brown sugar, firmly packed
1 1/3 c. fat-free milk
2/3 c. fat-free, cholestrol-free egg product
1 t. vanilla
5 c. French bread, cut into 1-inch cubes
1/4 c. plus 2 T. miniature semisweet chocolate chips, divided
1/2 c. strawberry topping, optional
Frozen, fat-free whipped topping, thawed - optional

Preheat oven to 350* F. Spray 9 X 13-inch quiche dish or 9 X 1 1/4-inch pie plate with nonstick cookijng spray.

Beat bananas, sugar, milk, egg product and vanilla in large bowl with wire whisk until smooth.

Fold in bread cubes and 1/4 c. chocolate chips. Spread in dish. Sprinkle with remaining chocolate chips.

Bake 40 to 45 minutes or until golden brown and set.

Cut into wedges. Spoon strawberry topping over each serving, if desired and garnish with whipped topping, if desired.
