BANANA WALNUT BUTTERMILK BREAD

1 1/2 c. sugar
1/2 c. butter, softened
2 large eggs
4 very ripe bananas, mashed
1 T. vanilla
1 t. baking soda
1/3 c. buttermilk
1 1/2 c. flour
1 c. finely chopped walnuts

Preheat oven to 350 * F. In large bowl, cream sugar and butter; add eggs, one at a time, beating well after each addition. Beat in mashed bananas and vanilla; continue beating until smooth. In measuring cup, stir baking soda into buttermilk; add to banana mixture with flour and nuts. Stir until just combined. Pour batter into greased and floured 9 X 5-inch loaf pan. Bake 1 hour and 15 minutes or until toothpick inserted in center comes out clean. Cool in pan on wire rack for 10 minutes before removing to cool completely on rack.
