Banoffee Pie

Hi Everyone,
I’m from England and love your wonderful desserts. Here is a recipe for our Banoffee Pie. Hope you like it!

Ingredients

2 cans sweetened condensed milk
half cup of butter
3 cups graham crackers (or digestive biscuits)
quarter cup brown sugar
3 large bananas
quarter cup lemon juice
2 cups whipped cream

Method
Put condensed milk into thick based pan. Bring to boil and simmer until very thick, stirring constantly. Leave to cool.
Crush graham crackers or pulse in food processor until fine crumbs.
Melt butter in pan until just liquid.
Add sugar to crumbed crackers then add to liquid butter in pan and stir until thoroughly mixed.
Press crumb mix into bottom and sides of 8 inch pie tin. Refrigerate.
Cut bananas into quarter of an inch slices. Toss in lemon juice to keep their color. Drain.
Take out chilled crumb base from refrigerator and add sliced bananas.
Smooth over thickened condensed milk, taking care to reach the edges. Top with whipped cream. Serve and enjoy! :lol:

Can the condensed milk be heated over water in a double boiler with the same results. Previously I have made this by simmering umopened cans for about 3 hours
