This recipe is a fruitful combination fo flavors; good served over rice.
3 chicken breasts halved
1/2 c. flour
salt and pepper
2 T butter
2 T cooking oil
1 1/2 c. orange juice
2 T. vinegar
2 T. brown sugar
1 t. basil
1/2 t. nutmeg
1 can (l6 oz. ) peach halves, drained
Shake chicken pieces in bag with flour, salt and pepper to taste; brown in butter and oil. Place browned chicken in a greased 3 quart casserole dish. Combine orange juice with vinegar, sugar, basil, and nutmeg and pour over chicken. Cover and bake at 375 degrees for 1 hr. and 15 min. until tender. Baste often and place peach halves between chicken pieces and baste well. Bake uncovered 15 min. longer.
