Basil Bocconcini Salad
Light summer salad perfect for those hot afternoons - little preparation time. Complements a main dish of moist BBQ chicken or steak.
Ingredients:
Sweet tomatoes
Bocconcini
Fresh Basil
Salt
Pepper
Extra Virgin Light Olive Oil
Balsamic Vinegar
Slice bocconcini and tomatoes
Chop fresh basil into small pieces (the whole room will fill with the sweet smell of basil)
Mix tomato and bocconcini gently in bowl
Dressing: Mix equal parts balsamic vinegar and olive oil)
Add a dash of salt and pepper
Serve salad into 4 separate bowls - drizzle dressing on top then sprinkle with freshly chopped basil.

What is bocconcini? I never heard of it. and where can I find it to make this recipe?

Hi there ohiojude.
Bocconcini are small balls of fresh mozzarella. Your local grocer should be able to assist you with this. It’s packed in liquid in margarine-like sized containers. Where I live, the label name is STELLA. You might find Bocconcini in the Deli section with the Deli or specialty cheeses. Good luck with your Bocconcini search.
