Ingredients:
* 4 lb Pork Spare Ribs or Chops
* 2 tbsp Olive Oil
* 2 White Onions Chopped
* 4 Cloves Garlic Crushed
* 2 Dried Red Chilly
* 1 cup Dark Brown Sugar
* 2 tsp Cumin Seeds
* 6 1/2 Tablespoon Soya Sauce
* 2 1/2 or 3 Cup Tomato Ketchup
* Pinch of Garlic Salt
* Fresh Ground Pepper to Taste
Method:
* Preheat the oven to 360. Place the ribs/chop and bake until cooked thorough, 20-25 minutes or more.
* Now in a saucepan heat the olive oil and throw the cumin seeds. When the cumin seeds starts to pop add garlic and onions. Fry until they are fragrant.
* Now add crushed dry chilly and brown sugar to onion and garlic. Keep string until the sugar has melted making sure there are no lumps. Note: If you don’t want it spicy or for kids leave the chilly whole. Discard once the sauce is ready.
* Once the sugar is melted add soya sauce and tomato ketchup.
* Season with salt and pepper.
* Bring to the boil and simmer for 10 minutes. Note: If it is too thick you can add little water. If you don’t like biting into the garlic, onions and rest of the ingredients you can blend the sauce in a blender.
* Take the cooked rib/chop out of oven and brush it with half of the sauce.
* Return the rib/chop back to oven and cook for further 10 minutes.
* Serve it on the bed of fresh crisp salad with bacon candy and renaming sauce on the side. ENJOY!!!
