Beef Encore Soup

A delicious use for leftover roast beef!

2 to 3 c. chopped cooked roast beef
3 stalks celery, chopped
2 carrots, pared and sliced
2 small onions, peeled and chopped
1 can (16 oz.) tomatoes, undrained
1 pkg. (10 oz.) frozen mixed vegetables
1 pkg. chili seasoning mix
1 1/2 qts. water
1/3 c. butter, melted
1/2 c. flour

Combine all ingredients except butter and flour in crockpot.
Cover and cook on LOW 8 to 10 hours.
One hour before serving, turn setting on HIGH. Blend flour and butter until smooth; pour into soup, stirring constantly until mixture is well blended. Cook and stir until soup is thickened.
