Another of Mom’s recipes.

1 pound of ground beef
1 egg
1 tsp salt
1/4 onion - chopped fine (or onion powder)
1 cup raw rice
1 large can tomatoes (crushed) or tomato sauce

Combine ground beef, egg, salt, onion, and rice. Form into small (1 or 1 1/2 inch) balls and brown them all around in an electric skillet. Pour the tomatoes over the meat balls and simmer, covered, 45 to 60 minutes - until rice is done. Make sure you keep enough liquid in the skillet to cook the rice, adding water as needed.

Round Steak - sliced thin
salt and pepper
onion powder
bacon - cut into 3 inch pieces
carrots - cut lengthwise into quarters and then 3 inch long pieces
toothpicks
flour
1 can beef bouillon

Cut steak into about 3 inch squares. Sprinkle with salt, pepper and onion powder. Place one piece of bacon and one carrot stick on one edge of each piece of meat. Roll up the meat around the carrot and secure with a toothpick. Dust the rolls with flour and brown in an electric skillet in butter. When browned all around, pour in the beef bouillon and one can of water. Simmer for about 1 hour until tender.
