Beer-Braised Sirloin Chops with Mushrooms
Makes 4 servings
4 each boneless sirloin pork chops, 3/4-inch thick
2 tablespoons flour
1 tablespoon butter
1/2 cup chopped green onion
2 cloves garlic, minced
8 ounces mushrooms, sliced
1/2 teaspoon thyme, chopped, use fresh if available
8 ounces beer, room temperature
freshly ground black pepper
buttered noodles (optional)
minced fresh parsley (optional)
Lightly flour chops. Melt butter in non-stick skillet over medium-high heat until foaming. Brown chops quickly on both sides approximately 1 minute each side. Remove from the pan and set aside.
Add green onion, garlic, mushrooms and thyme and sautÃ© an additional minute. Return chops to the skillet and add the beer; (my favourite is a nice strong dark English ale) bring to a boil.
Reduce heat, cover and simmer for 7 to 8 minutes. Season with salt and pepper and serve with noodles, garnished with parsley, if desired.
