Beer-Braised Sirloin Chops with Mushrooms

Makes 4 servings

Ingredient:

4 each boneless sirloin pork chops, 3/4-inch thick
2 tablespoons flour
1 tablespoon butter
1/2 cup chopped green onion
2 cloves garlic, minced
8 ounces mushrooms, sliced
1/2 teaspoon thyme, chopped, use fresh if available
8 ounces beer, room temperature
salt
freshly ground black pepper
buttered noodles (optional)
minced fresh parsley (optional)

Lightly flour chops. Melt butter in non-stick skillet over medium-high heat until foaming. Brown chops quickly on both sides approximately 1 minute each side. Remove from the pan and set aside.

Add green onion, garlic, mushrooms and thyme and sauté an additional minute. Return chops to the skillet and add the beer; (my favourite is a nice strong dark English ale) bring to a boil.

Reduce heat, cover and simmer for 7 to 8 minutes. Season with salt and pepper and serve with noodles, garnished with parsley, if desired.
