Beet Root Appetizers

You can use large or small beets depending on the diameter of the appetizers you wish to serve.

I prefer to take fresh beets, UNPEELED!, wash them, coat them with Sunflower oil and bake in 300 - 350 oven until a fork pierces but still firm.

Peel and clean the beets and slice thick enough to be picked up by hand but not overly thick.

Place the beets on a baking sheet either oiled with sunflower oil or use the non-stick foil.

Place a nice mound of Gorgonzola cheese on top of each beet round and heat in the oven just long eough to soften and melt the cheese but not to where it runs off the beet.

These can be served warm or chilled.

Since I do not care for Blu Cheese I use the Gorgonzola since it is not too strong for my taste.
Feel free to use Blu if you like its strong flavor.

This is a real hit with the family.

The best part is that this is one you can make ahead and chill in the fridge then decide if you will serve it cold or just slightly warm it up to serve.
Being a beet lover, this is a big hit.
