Belle,s Mother,s Green Tomato Relish

This is recipe my mother made every summer and she put up a lot for use in the winter month,s. It was really very good I still put it up if we have to many tomatoes. You can serve it with meats or for making slaw. this recipe is a large one.

1 qt. chopped cabbage
1 qt. chopped onion
1 gal. thinly sliced green tomatoes
10 red and green bell peppers
1 qt. celery chopped
1-1/2 qt. red cider vinegar
4 lbs. sugar
1 cup all-purpose flour
1 Tbsp. mustard seeds
1 Tbsp. celery seeds
1 tsp. ground turmeric
1 qt. diced sweet pickle
1/2 tsp alum

In a large enamel dishpan place cabbage, onion, tomatoes and peppers and sprinkle with a good handful of salt, let stand overnight. The next morning, drain off the liquid and put dishpan on stove with vegetables. Add chopped celery and enough fresh water to cover. Bring to a boil over medium heat, drain. Add vinegar, sugar, flour, mustard and celery seeds, turmeric. Cook just until tender taste. Add diced pickles and alum to mixture just long enough before canning to heat them thoroughly. Pour into sterilized jars and seal immediately. Yield 39 pints.
