Ben Franklin Turkey Meatloaf

No, this was not a recipe from the early American statesman. But since he argued that the turkey–and not the bald eagle–should be the national bird, this recipe is named after him.

2 1/4 teaspoons Extra Virgin Olive Oil, plus some for oiling the pan
1 pound ground turkey
1/4 cup onion, chopped
1 egg yolk
2 tablespoons parsley, chopped
1 1/2 tablespoon unseasoned bread crumbs
1 teaspoon salt
1/4 teaspoon black pepper
1 cup prepared tomato sauce
1 cup chicken broth

Preheat oven to 350 degrees. Mix together tomato sauce and broth and set aside. Mix all remaining ingredients and form into a loaf. Place loaf on a baking pan lightly oiled with olive oil, and pour 1 cup of the tomato sauce mixture evenly over the top. Bake for 1 hour, occasionally basting with the pan juices and remaining tomato sauce mixture. Serves 4.
